What I Ate Wednesday

Helloooo Wednesday. Or is it Tuesday? Can’t it just be Friday? Holiday weekends are wonderful but I’m totally thrown off by Monday’s festivities. After a weekend of indulgence, fun, and hours of housework, What I Ate Wednesday is a welcome dose of normal.

I was SO sore from leg day on Monday and running around like a crazy person all day, there was no way I could drag myself to the gym. We hosted 18 people at our tiny house on Monday, and I cooked most of the food from scratch. Needless to say I need a long weekend extension.

Stuffing my face with apps, sangria, and piles of coleslaw and beans left me bloated and craving some serious healthy greens. This green smoothie was frozen blueberries and banana, PB2, Vega vanilla protein, 2 huge handfuls of spinach, and a pinch of turmeric and black pepper. All whipped up in my new bff I mean… Vitamix. Just what the doctor ordered!

I had meetings all morning and didn’t have time to snack so I nearly gnawed my arm off before I made it to my desk to break into leftovers of coleslaw and corn and black bean salad. A lighter version of yesterday’s immoderation. So yummy!

Dinner was more leftovers. Even though it seems natural to shy away from foods connected to events of overindulgence and gluttony, I find it satisfying to eat small bits of these traditional foods as leftovers. Plus, I’m obsessive about not wasting food. Too many people starve to throw away perfectly good food. Can’t do it. Coleslaw, grilled potatoes, and a vegan carrot dog.

Yep, you read that right. I shaved carrots into hotdog shapes, boiled them in salt water for 8 minutes, marinated them overnight in a mixture of Not-Beef bullion, soy sauce, liquid smoke, and other spices, then tossed them on the grill. Do they taste like real hotdogs? Not exactly. Are they delicious and satisfying? Yep! Oh, and after dinner, I totally snacked on a cold one straight from the fridge to munch on.

Per usual, my sweet teeth (yes, all of them) were in full force after dinner. I had a piece of my Peach Upside Down Cake and multiple stolen forkfuls of homemade chocolate cake. I made Sam’s Ultimate Vegan Chocolate Cake and it was sooo rich and perfectly sweet and exactly the kind of cake you want at a birthday party. Or, like, everyday… :)
