Humpdaaayyy! We made it. This week has felt like straight crazy town and I honestly can’t believe it’s Wednesday. Can’t complain, I guess. Lucky for me, it’s been a week of good eats- What I Ate Wednesday Included!
A bite of banana and some applesauce got me ready to go for leg day AND 6:30am voting! Oh, and whilst doing our civic duty, John and I were photographed and published on the New York Times. THE NEW YORK TIMES. Check it.
Breakfast was a repeat of the Mint Chocolate Green Smoothie I posted on Monday. It was so creamy and delicious and satisfying. I added some frozen zucchini chunks for extra volume with minimal calories. Delish. Oh and cacao nibs are lyyyfe. On their own they’re pretty bitter but as a topping, they’re crunchy and delicious!
I had four hour-long meetings [gross] so I snacked on these AMAZING crackers all day. They are seriously SO unreal. I based them off of this recipe and fully intend to make them again, and again, and again… I’m so addicted. Maybe I’ll post my version soon…
Found some leftover fruit salad in the room one of my meetings was in. Score!
When I finally found a spare second [but only one] for lunch, I noshed on the salad I threw together. Spinach, arugula, sprouts, olive tapenade, raisins, and falafel. I used my favorite Baked Falafel and added an extra heap of turmeric. Because antioxidants. And because yum.
Post-work snackage consisted of some carrots and homemade hummus. We had dinner plans but I always come home from work hangry. Snacks foreva.
We walked over to Sycamore for our friend’s birthday dinner and all I had was a simple salad. Just kidding, I ate so much chips and guac. So. Much. Guac. Hence all I wanted for dinner was a salad. Everything was yummy!
After dinner, our friends came over to celebrate and watch the polls. I had a few sips of wine, but to be honest, alcohol hasn’t been agreeing with me well lately. I love it and the wine was soooo delish but it just makes me feel really toxic. Bleh…
Not to worry, I ended my night on a good night with a cup of turmeric tea and a piece of delicious dark chocolate. Probz not vegan, probz don’t care. Dark chocolate over everything.
