What I Ate Wednesday

I’ll be honest, I just had to wake myself up from a deep sleep on the couch to write this. That’s right, I fell dead asleep at 7:30pm. Phew! I’m not sure what’s got me so beat on this (almost) Hump Day but I’m never too tired for food! And I’d never leave you without telling you What I Ate Wednesday!

Today was an all-day retreat for my team at work so today’s eats look a little different than normal. But not different enough to keep me from splitting the typical banana with John before our 5:30am workout. Some habits die hard, right?

I sipped on my typical blueberry smoothie on my way into the office to grab some retreat supplies. I’m SO happy it’s finally warm(ish) enough to be able to have a cold smoothie in the morning without freezing my little fingers off walking to my car! Hellooooo spring!

I snacked on an (unpictured) apple whilst listening to coworkers discuss year-end recap and future strategy.

One of my tasks for planning this retreat was ordering the lunch. Fitting right..? I ordered Panera because it’s a breeze to order online and everyone likes it. Except me. Bleh, I just haven’t had a satisfying meal there in years. I had their Mediterranean Quinoa Salad that had kale, quinoa, almonds, tomatoes, etc. It was just eh and I wish I would have skipped the dressing altogether…

Thank goodness for my coworker who brought in a pack of strawberries. They ONLY non-gross, processed snack of the day and a totally refreshing snackity.

After a full day of presentations, activities, and discussion, I was hangry and couldn’t resist another snack on the (7 minute) drive home. Pathetic, I know. What can I say, carrots and hummus just call to me.

Dinner was the last of the AMAZING soup John made this weekend. It’s a vegan version of classic French Onion Soup cooked in the Crockpot for 22 hours and it is TO. DIE. FOR. My man is too good to me. We had it with some toasted multigrain crostini and roasted golden beets. So much yumminess.

I needed a chocolate fix after my nap so I’m munching on a chocolate-dipped rice cake with a schmear of PB and some cacao nibs for dat crunch.
