Farmer’s market season is officially upon us and I’m completely smitten with all things spring! This roundup of Vegan Spring Recipes showcases all of the best flavors of the season of freshness!
WIPPEEE!! We went to our first farmer’s market of the spring this weekend!! Walking through the stalls, ogling at the variety of greens, smelling fresh baked breads… It was like heaven on earth. During the summer, we go to the farmer’s market every Saturday and it’s one of the most exciting parts of every week.
We picked up some great spring goodies including: asparagus, ramps, live herbs to plant, spring onions, greens, a croissant, and a compost bin! I’m super excited about the compost bin because we can fill it every week and then take it back to the stand. The farmer will swap us out for a clean one and boom! Less waste!
To use up some of the wonderful things we found and embrace all things spring, I’m rounding up some of my personal favorite spring recipes and some from across the interwebs! I hope they inspire you to head to your nearest market and work some spring magic in your kitchen!
Appetizers + Snacks
Asparagus Crostini– I know I just posted this recipe last week but they’re just TOO perfect for Memorial Day, Mother’s Day, Easter, or any other spring festivity!
Green Goddess Hummus– I eat hummus every single day, but it’s a special occasion to whip up some of this creamy green goddess goodness.
Zucchini Fritters– With a little kick from jalepeƱo, these fritters look like a total spring dream!
Cucumber Avocado Rolls– Everything Sam makes is so simple and always amazing. These show-stopping rolls are no exception!
Soup + Salad
Minted Pea Soup with Cashew Cream– Gena’s brilliance with simple, comforting, vegan food is unmatched. I love this warm recipe made with spring flavors!
Chilled Cucumber and Avocado Soup– When the weather starts to heat up, this refreshing soup will keep you feeling chill as a… cucumber!
White Bean Arugula Salad– You’ll have to leave the parmesan out of this salad if you want it to be vegan, but it looks too divine to leave off the list!
Mustard Snap Peas + Radishes– Like most great recipes, this recipe was a happy accident of a surplus of veggies in the fridge!
Citrus Arugula Salad with Maple Vinaigrette– One of the first greens to poke its tiny head out of the dirt is arugula and this salad serves it up perfectly.
Simple Herb Salad– When it comes to delicate spring flavors, simple is the best!
Mains + Sides
Asparagus + Ramp Barley Risotto– Ramps are one of those vegetables that are available for such a short period of time. They’re to die for in this risotto!
Green Goddess Pizza– Pizza and greens together?! That’s what balance is all about right?!
Pesto Zucchini Noodles– Green on green on green, pesto zoodles are a refreshing spring lunch or dinner.
Socca Flatbread with Spring Herbs + Greens– OK, so this is basically another green pizza but I think it’s the most genius idea ever!
Garlic Roasted Carrots– Carrots can be found in the supermarket year round, but nothing compares to the sweet, fresh flavor of fresh farmers carrots.
Pesto Pea Gnocchi– Pillow piles of potato percolating in punchy pesto and perky peas. Perfect!
Dessert
Strawberry Rhubarb Crisp– Rhubarb is one of the few spring fruits + veggies (ok, which one is it?) that I haven’t experimented with yet. This crisp looks like a great place to start!
Vegan (GF) Almond Poppy Seed Cake– This cake just looks so light and fluffy, perfect for having friends over for brunch or lunch!
Healthy Carrot Cake Cupcakes– Katie is a healthy treat goodness and these carrot cake cupcakes is no exception!
Lemon Coconut No Bake Bites– No joke, these lemony balls of coconut bliss are so delicious I have to hide them from myself!
